Dinner recipe round up. week 4
Skipped a week but we are back up and running. I hope this makes your life a little bit easier this week!
Monday: Mediterranean Quinoa Bowls with Roasted Red Pepper Sauce - Pinch of Yum
Mediterranean flavors are always a hit in our house. I am really trying to use up a bunch of pantry ingredients this week and luckily this recipe does just that! I might sub out rice for quinoa depending on when I actually end up making this for dinner. Also here is your permission slip to say quinoa isn’t that great. It tastes way less good than rice and I’m not afraid to say it. I’m just hell bent on not being wasteful so here we are. Using up some quinoa.
Tuesday: Vegetarian Taco Skillet - two peas & their pod
Please do not be alarmed by the amount of spices in this dish. I typically just stand in front my spice cabinet with my measuring spoon and measure all spices at once into a small bowl so I can just dump it. It will save you time and from swaying back and forth between your spices and your range. We’re all about efficiency here, folks. Anyway, I can’t wait to dip some chips into this taco skillet and call it dinner!
Wednesday: Salmon Burgers with Slaw - Pinch of Yum
We are using canned salmon here so these are easy and budget friendly. I will likely serve these with some roasted potatoes. Wait. I’m so excited for this dinner.
Thursday: Instant Pot Mac and Cheese - Pinch of Yum
Ok wow, with my THIRD recipe from Pinch of Yum for the week. It looks like I really need to diversify my sources. Every single one of her recipes I’ve made over the years has never failed me though. But I promise I will look elsewhere next week.
I’m serving this with BBQ tempeh. If you’ve never had tempeh, it’s a fermented soy based protein. I know that sounds incredibly unappetizing but I personally love tempeh. It’s kind of earthy and toothsome. I’ll slice that up, sautee it with some olive oil and douse it in bbq sauce.
This dinner could definitely use something green so you if you have the energy, go for it. I probably won’t and that’s ok!
